MMMM Eggplant Entree Chills me Out.
ohmigod... go back and make that eggplant entrée thingie from yesterday's diary... and then put it in the fridge and eat it the next day. It is like a cross between marinated veggies, a salad, and super chunky salsa. It is TWICE as good the next day chilled, with the flavours melded.

I am once again eating it with corn chips. mmmm
